Ingredients

Main Ingredients

  • 2 cups roasted peanuts Unsalted or lightly salted
  • 1 cup granulated sugar Base for caramel
  • 1/2 cup unsalted butter For richness
  • 1/4 cup heavy cream For silky texture
  • 1 teaspoon sea salt Sprinkle for enhancing flavor

Instructions

Preparation

  • Gather all your ingredients and set them out. Measure precisely to ensure success.
  • If starting with raw peanuts, roast them in a preheated oven at 350°F (175°C) for about 10-12 minutes until they turn golden and fragrant.

Making Caramel

  • In a saucepan over medium heat, combine sugar, butter, and a pinch of salt. Stir until the mixture melts and begins to bubble.
  • Once a golden color is achieved, remove the caramel from heat and slowly drizzle in the heavy cream while stirring cautiously.

Combine and Form Clusters

  • In a large bowl, combine the roasted peanuts with the hot caramel. Mix gently to coat the peanuts evenly.
  • Use a spoon to drop heaping tablespoons of the peanut-caramel mixture onto a baking sheet lined with parchment paper.
  • Before the caramel sets, sprinkle a pinch of sea salt over each cluster.

Cooling and Storing

  • Allow the clusters to cool completely at room temperature until the caramel hardens, about 30 minutes.
  • Store your Salted Peanut Caramel Clusters in an airtight container at room temperature for up to a week.

Notes

For a dairy-free option, substitute heavy cream with coconut cream. You can also use organic maple syrup for a unique flavor twist. Timing and temperature are crucial for perfect caramel.
