  • 2 fillets salmon fillets Use high-quality salmon for the best flavor.
  • 1 cup long-grain white rice
  • 1 sheet puff pastry Ensure it is thoroughly thawed for easier handling.
  • 1 piece lemon Juice and zest will be used.
  • 2 cloves garlic Chopped or minced.
  • 2 tbsp fresh herbs (parsley or dill) Experiment with different herbs for unique flavors.
  • 2 tbsp olive oil
  • 1 egg for egg wash

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a pan, heat olive oil over medium heat.
  3. Add garlic and cook for 1–2 minutes until fragrant.
  4. Add rice and cook for 2–3 minutes, then stir in lemon juice and zest.
  5. Remove from heat and stir in fresh herbs.
  6. Lay the puff pastry sheet on a floured surface.
  7. Place one salmon fillet in the center of the pastry and season with salt and pepper.
  8. Spoon the lemon rice mixture over the salmon fillet.
  9. Place the second salmon fillet on top of the rice and fold the pastry over to fully encase the salmon and rice.
  10. Seal the pastry edges well and brush the top with an egg wash.
  11. Place the parcel on a baking tray and bake for 25–30 minutes or until the pastry is golden and puffed.
  12. Remove from the oven and let the parcel rest for a few minutes before slicing.

Notes

Serve with a crisp green salad or roasted vegetables. You can also add a dollop of tzatziki sauce to complement the flavors. Store leftovers in an airtight container in the refrigerator for up to three days, or freeze before baking.
