  • 24 pieces Ritz crackers
  • 24 pieces Rolo caramel candies
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon vegetable oil
  • Sprinkles (optional, for garnish)

Preparation

  • Preheat the oven to 350°F (175°C).
  • Place half of the Ritz crackers on a baking sheet.
  • Top each cracker with a Rolo candy.
  • Bake in the preheated oven for about 4-5 minutes, or until the Rolos are soft.
  • Remove from the oven and immediately press another Ritz cracker on top of each melted Rolo to create a sandwich.
  • In a microwave-safe bowl, combine the semi-sweet chocolate chips and vegetable oil. Microwave in 30-second intervals, stirring until melted and smooth.
  • Drizzle the melted chocolate over the cookie sandwiches and add sprinkles if desired.
  • Allow to cool and set before serving.

Notes

Store in an airtight container at room temperature for up to a week. For a unique twist, add a layer of peanut butter between the cracker and Rolo or use white chocolate instead of semi-sweet.
