Ingredients
  

Main Ingredients

  • 4 cups Tomatoes Use ripe, in-season tomatoes for the best flavor.
  • 1 head Garlic Bruise and halve the garlic head.
  • 1 medium Onion Quartered.
  • 2 tablespoons Olive oil Drizzle generously.
  • 1 tablespoon Balsamic vinegar Adjust quantity to taste.
  • to taste Salt and pepper Sprinkle liberally.
  • to taste Basil Use fresh or dried.
  • to taste Oregano Use fresh or dried.

Preparation

  • Halve your tomatoes and place them in a large roasting pan.
  • Add the bruised and halved garlic.
  • Add 1 medium, quartered onion.
  • Sprinkle liberally with sea salt and pepper, then drizzle with olive oil and balsamic vinegar.
  • Use your hands to toss the ingredients together.

Cooking

  • Roast in the oven for about 45 minutes at 400°F (200°C).
  • Once roasted, transfer the tomatoes to a large bowl using a slotted spoon.
  • Add a generous amount of oregano and basil.
  • Blend until smooth.

Notes

Allow the sauce to cool before transferring to an airtight container. Store in the refrigerator for up to a week or freeze in portions for longer storage. Reheat on the stovetop over low heat or in the microwave.
