This easy and flavorful roasted tomato sauce utilizes ripe tomatoes and requires no peeling. Perfect for pasta, pizza, and dipping!

Ingredients
  

Main Ingredients

  • 4 lbs ripe tomatoes, cut into halves or quarters Use the ripest tomatoes for the best flavor.
  • 1/4 cup extra virgin olive oil
  • 1 medium onion, roughly chopped
  • 6 cloves garlic, smashed (no need to peel)
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp freshly ground black pepper
  • pinch red pepper flakes (optional) Add if you like a little heat.
  • 1 tsp sugar (optional) Add if the tomatoes are too acidic.
  • handful fresh basil leaves (optional)

Instructions
 

Preparation

  • Preheat your oven to 400°F.
  • In a large bowl, toss the tomatoes with the olive oil, salt, black pepper, and optional red pepper flakes and sugar.
  • Spread the tomatoes evenly on a baking sheet; add the chopped onion and smashed garlic around the tomatoes.

Cooking

  • Roast everything in the oven for about 35 to 45 minutes until the tomatoes are soft and start to char.
  • Let the mixture cool for a few minutes.
  • Transfer the roasted tomatoes, onions, and garlic into your blender, including the pan juices.
  • Blend until smooth, then add the fresh basil leaves and blend a few more times.
  • Taste the sauce and adjust salt, pepper, or sugar as needed.
  • For a richer flavor, simmer the blended sauce on medium heat for about 10 minutes, stirring occasionally.

Serving

  • This sauce is perfect for pasta, pizza, or as a dipping sauce for breadsticks.

Notes

Let the sauce cool completely before storage. Store in airtight containers in the refrigerator for up to one week or freeze for up to three months. Adjust spices as desired.
