Roasted Tomato Sauce

Main Ingredients

  • 10 cups Roasted Chopped Tomatoes Choose ripe, flavorful tomatoes for the best taste.
  • 1 tablespoon Lemon Juice Add 2 Tablespoons for quart jars.

Instructions
 

Preparation

  • Rinse the fresh tomatoes.
  • Cut up the tomatoes and place them in a baking pan. Broil or roast them in the oven until they are soft and slightly charred.
  • Chop up the roasted tomatoes and add them to a large pot or roasting pan.

Cooking

  • Bring the mixture to a boil and then let it simmer until it reaches your desired thickness.
  • Ladle the sauce into canning jars.
  • Add 1 tablespoon of lemon juice to each pint jar (2 tablespoons for quarts).
  • Wipe the rims of the jars, remove any air bubbles, and add the lids.
  • Place the jars in a water bath canner and process at a rolling boil for 20 minutes for pints and 25 minutes for quarts.
  • Remove the hot jars with a jar lifter and set them on the counter. Do not disturb them for 24 hours.

Notes

Roasted Tomato Sauce is great over pasta, as pizza sauce, or used in stews. It can be stored in a cool, dark place for up to a year. Opened jars can be kept in the fridge for up to one week.
