Ingredients
  

Main Ingredients

  • 4 pieces ripe Roma tomatoes about 500g
  • 1 piece medium red onion, finely chopped 150g
  • 4 cloves garlic cloves
  • 1/2 cup fresh cilantro, chopped 15g
  • 1 piece lime, juice
  • 2 tblsp olive oil 30ml
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Slice the tomatoes in half and arrange them cut-side up on the baking sheet. Add the whole garlic cloves among the tomatoes.
  • Drizzle with olive oil and season with salt and pepper.
  • Roast for 25-30 minutes until the tomatoes are soft and slightly charred.
  • Allow to cool slightly before transferring to a mixing bowl. Stir in the chopped red onion, cilantro, and lime juice.
  • Taste and adjust seasoning as needed.
  • Serve with tortilla chips or as a topping on your favorite dishes.

Notes

To store, place in an airtight container in the refrigerator for 3-4 days, or freeze for up to 3 months. Thaw in the fridge before use. Choose ripe tomatoes for best flavor.
