  • 1 pound tomatillos, husked and rinsed
  • 2 jalapeño peppers, stemmed and seeded Adjust for spiciness
  • 1 small onion, quartered
  • 2 cloves garlic, peeled
  • 1/2 cup fresh cilantro leaves
  • 1 tablespoon lime juice Adjust to taste

Preparation

  • Preheat the oven to 400°F (200°C).
  • Place the tomatillos, jalapeños, onion, and garlic on a baking sheet.
  • Roast in the oven for 20 minutes, or until the tomatillos are soft and slightly charred.
  • Transfer the roasted vegetables to a blender or food processor. Add the cilantro, lime juice, and salt.
  • Blend until smooth. Adjust seasoning with additional salt or lime juice if needed.

Serving

  • Serve the salsa warm or chilled with tortilla chips or as a topping for tacos.

Notes

For a smokier flavor, try grilling the vegetables instead of roasting them. Store in an airtight container for 5 to 7 days, or freeze in small portions.
