  • 1 cup roasted red peppers, sliced

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet, heat olive oil over medium heat. Add spinach and sauté until wilted.
  • In a bowl, mix the sautéed spinach, roasted red peppers, and mozzarella cheese.
  • Cut a pocket in each chicken breast and stuff with the mixture.
  • Season with garlic powder, Italian seasoning, salt, and pepper.

Cooking

  • Place the stuffed chicken in a baking dish.
  • Bake for 25-30 minutes or until the chicken is cooked through.
  • Let rest for a few minutes, then slice and serve.
