For the chicken

  • 4 pieces boneless, skinless chicken breasts Ensure the chicken is fresh.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a bowl, mix together the chopped roasted red peppers, spinach, mozzarella cheese, minced garlic, Italian seasoning, salt, and pepper.
  • Carefully slice a pocket into each chicken breast, being careful not to cut all the way through.
  • Stuff each chicken breast with the filling, then secure with toothpicks if necessary.

Cooking

  • Heat olive oil in a large oven-safe skillet over medium heat.
  • Sear the stuffed chicken breasts until golden brown on both sides, about 3-4 minutes per side.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through.
  • Remove from the oven, let rest for a few minutes, and then serve.

Notes

This dish pairs beautifully with a light salad or roasted vegetables. Drizzle with homemade pesto for extra flavor.
