  • 3 pieces ripe pears, halved and cored Choose ripe pears for the best sweetness and texture.
  • 1 tbsp olive oil
  • 2 oz blue cheese, crumbled Experiment with different types of blue cheese for varied flavor profiles.
  • 2 tbsp shelled pistachios, chopped For extra crunch, toast lightly before chopping.
  • 1 tbsp honey Add a pinch of cayenne for a spicy kick.
  • 1/2 tsp ground black pepper
  • Fresh thyme leaves for garnish Optional. Can substitute with fresh rosemary or sage.

Preparation

  • Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper.
  • Brush the pear halves with olive oil and place them cut-side down on the tray.
  • Roast for 15 minutes until slightly caramelized.
  • Carefully flip the pears, sprinkle blue cheese and chopped pistachios on top, and roast for an additional 5 minutes.
  • Drizzle with honey, season with ground black pepper, and garnish with thyme before serving.

Notes

Serve alongside a light arugula salad dressed with lemon vinaigrette. Pair with dessert wine or nutty Merlot. Store leftovers in an airtight container in the refrigerator for up to three days, or freeze for up to a month.
