Ingredients
  

Lamb and Herb Crust Ingredients
  • 1 whole whole leg of lamb (4 to 5 pounds)
  • 1 cup breadcrumbs
  • 1 cup chopped parsley
  • 1/2 cup chopped mint
  • 4 cloves garlic, minced
  • 1 lemon zest of 1 lemon
  • 3 tablespoons olive oil
  • 1 teaspoon black pepper

Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (220°C).
  2. In a food processor, pulse breadcrumbs, parsley, mint, garlic, lemon zest, black pepper, and olive oil until coarse and combined.
  3. Place the lamb leg on a roasting pan and pat dry.
  4. Season lightly with salt and pepper.
  5. Press the herb crumb mixture firmly on top and along the sides of the lamb to form a crust.
  6. Roast for 15 minutes, then reduce heat to 350°F (175°C) and roast for 1 hour to 1 hour 20 minutes.
  7. Remove from the oven and let the lamb rest for 15 minutes.
  8. Slice the lamb and serve with fresh herbs or roasted vegetables.

Notes

To complement this dish, serve alongside creamy mashed potatoes, fresh arugula salad, or roasted seasonal vegetables. For extra flavor, consider a mint yogurt sauce.
