- In a medium bowl, blend the softened cream cheese, mayonnaise, and Dijon mustard until smooth.
- Add the chopped green onions, cooked chicken breast, celery, and shredded cheddar cheese to the bowl.
- Mix everything well and season with salt and pepper to taste.
- Arrange half of the Ritz crackers on a serving platter.
- Spread a generous amount of the cream cheese mixture on each cracker.
- Place the remaining crackers on top to form small sandwiches.
- If you’d like, garnish with fresh parsley for a pop of color.
- Chill the sandwiches in the refrigerator for at least 30 minutes to allow the flavors to develop.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Freezing is not recommended as the crackers can become soggy upon thawing. You can swap in your favorite herbs for fresh parsley or add diced jalapeños for a kick.
