  • 1 piece pre-made pie crust
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped Use fresh spinach for best flavor.
  • 1/2 cup shredded mozzarella cheese
  • 3 large eggs
  • 1/2 cup milk
  • Salt and pepper to taste
  • Pinch of nutmeg (optional)

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a mixing bowl, combine the ricotta cheese, chopped spinach, mozzarella cheese, eggs, milk, salt, pepper, and nutmeg.
  • Stir until well combined.
  • Place the pre-made pie crust in a pie dish.
  • Pour the ricotta and spinach mixture into the pie crust and spread evenly.

Cooking

  • Bake for 30-35 minutes or until the filling is set and the top is lightly golden.
  • Let it cool for a few minutes before slicing and serving.

Notes

Serve warm or at room temperature. It pairs well with a light side salad or yogurt. Store in the fridge for up to 3 days or freeze for up to a month.
