Ingredients
  

Wet Ingredients
  • 1 cup unsalted butter, softened Ensure butter is at room temperature for best results.
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs Beaten in one at a time.
  • 2 teaspoons vanilla extract
Dry Ingredients
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Mix-ins
  • 1 1/2 cups Rice Krispies cereal Gently fold in to maintain crispness.
  • 1 1/2 cups semi-sweet chocolate chips Feel free to replace half with nuts for variation.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy.
  3. Beat in the eggs one at a time, making sure to mix well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually incorporate the dry ingredients into the butter mixture, mixing just until combined.
  6. Gently fold in the Rice Krispies and semi-sweet chocolate chips.
  7. Drop tablespoon-sized portions of dough onto the prepared baking sheets.
Baking
  1. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden while the centers remain soft and chewy.
  2. Let the cookies cool on the baking sheet for 5 minutes before transferring them to wire racks to cool completely.

Notes

For added enjoyment, serve warm with milk or ice cream. You can also drizzle melted chocolate on top or sprinkle with sea salt for a sweet-salty combo.
