Ingredients
  

For the salsa

  • 1 28-oz. can whole tomatoes, undrained
  • 2 10-oz. cans diced tomatoes and green chilies, undrained
  • ¼ cup chopped onion
  • 1 clove garlic, minced
  • 1 whole jalapeño, minced
  • ¾ teaspoon ground cumin
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ cup fresh cilantro, chopped
  • 1 tablespoon lime juice

Preparation

  • In a blender or food processor, combine the canned whole tomatoes, diced tomatoes with green chilies, chopped onion, minced garlic, and jalapeño.
  • Pulse until the desired consistency is reached.
  • Stir in cumin, salt, pepper, cilantro, and lime juice.
  • Adjust seasoning to taste.
  • Chill for at least 30 minutes before serving to enhance the flavors.

Notes

Serve with tortilla chips, on grilled chicken, or over salads. Store in an airtight container in the fridge for up to a week or freeze for three months.
