  • 12 ounces Tortilla chips Forms the crunchy base for all your toppings.
  • 2 cups Shredded cheese Melts beautifully and adds rich, gooey flavor.
Toppings
  • 2 medium Bell peppers, diced Provides sweetness, color, and crunch.
  • 1 cup Black beans, cooked Adds heartiness and extra protein.
  • 1/4 cup Green onions, sliced Adds a fresh mild onion flavor.
  • 1/2 cup Reggae sauce Gives the nachos their sweet, smoky, and spicy Caribbean style flavor.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Dice bell peppers, slice green onions, rinse black beans, and warm the reggae sauce slightly.
  3. Line a baking sheet with parchment and spread tortilla chips in an even layer.
  4. Add half the cheese, beans, and peppers, then sprinkle the remaining cheese over the chips.
Baking
  1. Bake for 10 to 12 minutes or until the cheese is melted and bubbly.
  2. Sprinkle green onions and drizzle reggae sauce over the hot nachos.
  3. Serve immediately while warm and crisp.

Notes

For serving, pair with a refreshing salad or homemade guacamole. Store leftovers in an airtight container in the fridge for up to 2 days. Reheat on a baking sheet in the oven until warm.
