  • 1/2 cup rice noodles, cooked
  • 6–8 large shrimp, peeled and cooked
  • 1/4 cup shredded cabbage
  • 1/4 cup julienned carrots
  • 1/4 cup sliced cucumber
  • 1 tablespoon peanuts, crushed (for garnish)
  • 1 tablespoon soy sauce or sesame dressing

Preparation

  • Bring a pot of water to a boil, then add the rice noodles and cook according to the package directions. After they are done, drain them and rinse under cold water to prevent sticking.
  • In a heated pan with a touch of oil, cook the shrimp for about 2–3 minutes per side or until they turn pink and opaque. Set aside.

Assembly

  • Place the cooked rice noodles at the base of a bowl. Layer the cooked shrimp, shredded cabbage, julienned carrots, and fresh cucumber slices on top.
  • Drizzle with soy sauce or sesame dressing, then sprinkle crushed peanuts on top for a delightful crunch.
  • Mix everything together, and savor this light, flavorful, and refreshing dish.

Notes

Serve warm or cold. Garnish with extra crushed peanuts or sesame seeds for additional flavor and texture. Store leftovers in an airtight container in the refrigerator for up to 2 days. Keep dressing separate until ready to eat.
