Preparation
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
- In a large mixing bowl, beat the softened butter and granulated sugar together until the mixture is light and fluffy.
- Add in the egg, vanilla extract, and red food coloring, mixing well until combined.
- Gradually add the flour mixture and buttermilk alternately to the wet ingredients, starting and finishing with the flour. Mix until just combined.
- Drop rounded tablespoons of the batter onto the prepared sheets, spacing them about 2 inches apart.
Baking
- Place in the oven and bake for 10-12 minutes, or until the tops spring back when lightly pressed.
- Let the cakes cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
Filling Preparation
- In a separate bowl, beat together the softened butter and cream cheese until smooth.
- Gradually add in the powdered sugar and vanilla, mixing until the filling is fluffy.
Assembly
- Spread or pipe the cream cheese filling onto the flat side of one cake and sandwich it with another.
- Arrange the finished whoopie pies in a beautiful wreath shape on a serving platter.
Notes
Best enjoyed with a cup of hot cocoa or a glass of milk. Dust with powdered sugar or add holiday sprinkles for extra flair.
