Ingredients
  

For the whoopie pies
  • 2 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk, at room temperature Substitute with milk and vinegar if necessary
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring
For the cream cheese filling
  • 1/2 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a large mixing bowl, beat the softened butter and granulated sugar together until the mixture is light and fluffy.
  4. Add in the egg, vanilla extract, and red food coloring, mixing well until combined.
  5. Gradually add the flour mixture and buttermilk alternately to the wet ingredients, starting and finishing with the flour. Mix until just combined.
  6. Drop rounded tablespoons of the batter onto the prepared sheets, spacing them about 2 inches apart.
Baking
  1. Place in the oven and bake for 10-12 minutes, or until the tops spring back when lightly pressed.
  2. Let the cakes cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
Filling Preparation
  1. In a separate bowl, beat together the softened butter and cream cheese until smooth.
  2. Gradually add in the powdered sugar and vanilla, mixing until the filling is fluffy.
Assembly
  1. Spread or pipe the cream cheese filling onto the flat side of one cake and sandwich it with another.
  2. Arrange the finished whoopie pies in a beautiful wreath shape on a serving platter.

Notes
