Ingredients
  

Crust Ingredients

  • 3 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.5 teaspoon salt
  • 1 teaspoon lemon zest
  • 0.5 cup unsalted butter cut into pieces
  • 3 items eggs beaten

Filling Ingredients

  • 4 cups fresh raspberries or frozen, thawed and drained
  • 0.5 cup granulated sugar for filling
  • 1/3 cup seedless raspberry jam
  • 2 tablespoons cornstarch can increase for a thicker filling
  • 1 tablespoon fresh lemon juice

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a baking dish.
  • In a large bowl, mix the flour, sugar, salt, and lemon zest.
  • Cut in the butter until the mixture resembles coarse crumbs.
  • Beat in the eggs until well combined.
  • Spread the mixture in the prepared baking dish.

Filling

  • In another bowl, combine raspberries, sugar, jam, cornstarch, and lemon juice.
  • Pour the raspberry mixture over the crust.

Baking

  • Bake for 30-35 minutes or until set.
  • Allow to cool before slicing into squares.

Notes

Serve plain or dust with powdered sugar, and pair with vanilla ice cream or whipped cream. Store in an airtight container for up to three days at room temperature, or refrigerate for about a week. For longer storage, freeze for up to three months.
