Ingredients
  

For the Ribs
  • 1–2 racks St. Louis Style ribs (cut into individual ribs)
  • 1 tbsp yellow mustard
  • 3 tbsp BBQ rub
  • Apple juice (for spritzing)
For the Glaze
  • 1 cup raspberry preserves
  • 2–3 chipotle peppers in adobo (minced)
  • 1 tbsp adobo sauce
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey (optional) Can be omitted if not desired
  • Pinch of salt

Method
 

Preparation
  1. Remove the silver skin from the ribs, coat the ribs with yellow mustard, and then apply BBQ rub.
Cooking
  1. Smoke or bake the ribs at 250°F for 3–4 hours, spritzing with apple juice as needed for moisture.
  2. In a saucepan, combine all glaze ingredients and simmer until smooth and thickened.
  3. Brush the ribs with the glaze for the final 30 minutes of cooking. For extra caramelization, broil if desired.
Serving
  1. Allow the ribs to rest before serving. Offer extra glaze on the side for dipping.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days or freeze them for up to 3 months. Marinating the ribs overnight enhances flavor.
