Ingredients
  

For the soup

  • 4 cups vegetable broth Use low-sodium for lower salt content.
  • 1 cup diced tomatoes
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil

Cooking

  • In a large pot, heat a little oil over medium heat.
  • Add the diced onions and garlic, sautéing until translucent.
  • Stir in the chopped carrots and celery, cooking for about 5 minutes.
  • Pour in the vegetable broth and add the diced tomatoes.
  • Season with thyme, basil, salt, and pepper.
  • Bring the soup to a boil, then reduce to a simmer for 15-20 minutes until the vegetables are tender.
  • Serve hot.

Notes

Quick and Easy Soup pairs well with side salads or crusty bread. It can be stored in an airtight container for up to 4 days in the refrigerator or frozen for about 3 months.
