  • 8 ounces uncooked fettuccine
  • 4 ounces cream cheese, softened
  • 2 tablespoons butter
  • 1 cup heavy whipping cream
  • 2 large cloves garlic, minced
  • 1 cup freshly grated parmesan cheese Use freshly grated for best flavor.
  • Salt & pepper to taste

Instructions
 

Cooking Fettuccine

  • Boil a large pot of salted water and cook the fettuccine according to the package instructions until al dente. Drain and set aside.

Making the Sauce

  • Microwave the cream cheese in 20-30 second intervals until it is very soft and easy to incorporate into the sauce.
  • In a skillet over medium heat, add butter, softened cream cheese, heavy cream, and minced garlic. Stir with a spoon or whisk to melt the butter and cream cheese fully into the cream.
  • Allow the sauce to gently bubble and reduce for 3-4 minutes, stirring occasionally to prevent sticking, until slightly thickened.
  • Stir in the freshly grated parmesan cheese, letting it melt into the sauce for about 30 seconds.
  • Remove the pan from heat once the cheese is fully incorporated and the sauce is thickened.
  • If the sauce gets too thick, add a splash of hot pasta water before draining the pasta to loosen it.

Serving

  • Toss the drained fettuccine with the Alfredo sauce until well coated.
  • Season with salt and pepper to taste and serve immediately.

Notes

To elevate your Alfredo sauce, consider serving it with garlic bread and a simple green salad. You can also add grilled chicken or sautéed shrimp.
