- In a large saucepan, add the pumpkin puree and beer. Set the heat to medium and stir until it starts to simmer.
- In a separate bowl, toss the shredded cheddar and Gruyere with cornstarch until they’re well-coated.
- Gradually add the cheese mixture to your simmering pumpkin and beer, stirring continuously until the cheeses are beautifully melted and smooth.
- Sprinkle in the garlic powder, paprika, and nutmeg, along with salt and pepper to taste. Blend everything until it’s well combined and heated through.
- Transfer the fondue to a fondue pot or slow cooker to keep everything warm and ready to share.
