Preparation

  • If you're using a store-bought crust, roll it into your pie dish, crimping the edges. For homemade, prepare with flour, butter, sugar, and salt, then chill.
  • Preheat your oven to 425°F (220°C).
  • In a large bowl, combine pumpkin puree, sugar, cinnamon, nutmeg, ginger, and a pinch of salt. Mix well.
  • Gradually add eggs and milk, whisking until the filling is smooth.

Baking

  • Pour the filling into the prepared crust and bake at 425°F for 15 minutes.
  • Reduce the temperature to 350°F (175°C) and continue baking for 30-40 minutes, or until a knife inserted in the center comes out clean.

Cooling and Serving

  • Allow the pie to cool completely to help set the filling. Serve with whipped cream or vanilla ice cream.

Notes

Use a pie shield or foil to cover the crust edges during the first part of baking to prevent burning. Ensure all ingredients are at room temperature for even texture.
