Ingredients
  

For the Cheesecake Mixture

  • 2 cups good quality white chocolate chips Use high-quality chocolate for enhanced flavor.
  • 8 ounces cream cheese, softened Ensure it's softened for a smoother texture.
  • 1/3 cup powdered sugar
  • 2/3 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice Adjust according to your taste.

For Coating

  • 1 1/2 cups graham cracker crumbs
  • 1 1/2 cups gingersnap crumbs
  • 12 ounces white almond bark, for coating
  • 1 cup orange candy melts, optional drizzle For decoration.

Instructions
 

Preparation

  • In a large bowl, melt the white chocolate chips and let cool slightly.
  • Add cream cheese, powdered sugar, pumpkin puree, and pumpkin pie spice. Mix until smooth.
  • Stir in graham cracker and gingersnap crumbs until well combined.
  • Chill the mixture in the refrigerator for about 30 minutes.

Forming and Coating

  • Once chilled, scoop out small portions and roll into balls.
  • Melt the white almond bark and coat each ball, placing them on a baking sheet lined with parchment paper.
  • If using, drizzle orange candy melts on top for decoration.
  • Allow to set before serving.

Notes

Serve with a warm cup of chai or spiced tea. Can be stored in an airtight container in the refrigerator for up to a week or frozen for longer storage.
