Main Ingredients

  • 1 cup firm Greek yogurt (low-fat or full fat) Use firm Greek yogurt for the best texture.
  • 1 large egg Can be replaced with a flax egg or applesauce for vegan option.
  • cup granular sweetener (e.g., monk fruit) Adjust sweetness to taste.
  • 1 cup almond flour (or oat flour) Coconut flour can also be used.
  • ½ tsp vanilla extract
  • Pinch salt

Mix-ins

  • to taste chocolate chips Optional.
  • to taste chopped nuts Optional.
  • to taste fresh berries Optional.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190ºC) and line a baking sheet with parchment paper.
  • In a bowl, mix together Greek yogurt, egg, sweetener, vanilla extract, and a pinch of salt until smooth.
  • Gradually sift in almond flour and mix until a cookie dough forms. If the dough feels too sticky, add a little extra flour or more Greek yogurt if it’s still wet.
  • Gently fold in any mix-ins, such as chocolate chips or fresh berries.

Baking

  • Scoop out 8 equal portions of dough and shape them into cookies. Place on the parchment-lined baking sheet, leaving space between them.
  • Bake for 10-12 minutes, or until the edges turn light golden brown. Let cool completely before serving to help them firm up.

Notes

Best served fresh out of the oven or after cooling. Pairs well with milk or tea. Can top with nut butter for extra flavor.
