  • 1 large egg Large egg acts as a binder.
  • ¼ cup Greek yogurt Use 5% fat Greek yogurt for best results.
  • 3 tbsp granulated sweetener Use monk fruit or preferred sweetener, adjust to taste.
  • cup powdered peanut butter Brands like PB2 or PBFit work well.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the egg with Greek yogurt and granulated sweetener.
  • Using a whisk or fork, mix until everything is smoothly combined.
  • Gradually add in the powdered peanut butter and stir until you get a smooth cookie dough.
  • Scoop out about a tablespoon of dough and roll it into a ball. Place the balls on the prepared baking sheet and flatten them with a fork to create a crisscross pattern.
  • Bake the cookies in the hot oven for 7 to 9 minutes. They should be golden brown on the edges and slightly soft to the touch.
  • Do not overbake! They will firm up as they cool. Allow them to cool on the baking sheet for at least 10 minutes before serving.

Notes

Cookies are best enjoyed warm or at room temperature. Pair with milk or tea. Store in an airtight container at room temperature for up to a week or freeze for longer storage, separated with parchment paper.
