Preparation
- Season the pork ribeye steaks with salt and pepper.
- In a large skillet, heat the olive oil over medium-high heat.
Cooking
- Add the pork ribeye steaks to the skillet and cook until browned on both sides, about 4-5 minutes per side.
- Remove the pork ribeye steaks from the skillet and set aside.
- In the same skillet, add the chopped onion and minced garlic. Cook until the onion is translucent, about 2-3 minutes.
- Sprinkle the flour over the onion and garlic, stirring to combine.
- Slowly pour in the beef broth, stirring constantly to avoid lumps.
- Bring the gravy to a simmer and cook until thickened, about 5-7 minutes.
- Season the gravy with salt and pepper to taste.
- Return the pork ribeye steaks to the skillet, spooning the gravy over the steaks.
- Cover the skillet and cook for an additional 5-10 minutes, or until the pork ribeye steaks are cooked through.
- Serve the pork ribeye steaks with the gravy spooned on top.

This dish is best served hot and pairs wonderfully with mashed potatoes, rice, or fresh bread. For extra storage, let it cool before placing in an airtight container and refrigerating for up to 3 days or freeze for longer storage. Reheat gently before serving.
