Waffle Batter

  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 2 tablespoons granulated sugar
  • 1 cup all-purpose flour
  • 1 large egg
  • 2 teaspoons baking powder
  • 1/4 cup vegetable oil

Pizza Filling

  • 1/4 cup shredded mozzarella cheese
  • 3 tablespoons pizza sauce
  • 50 grams sliced pepperoni

Miscellaneous

  • Nonstick cooking spray

Preparation

  • In a big bowl, whisk together the salt, baking powder, and flour.
  • In another bowl, crack the egg and whisk in the sugar, vanilla, oil, and milk until smooth.
  • Combine the wet ingredients with the dry ingredients and stir gently until just mixed, being careful not to overmix.

Cooking

  • Lightly spray your waffle maker with nonstick spray and preheat it.
  • Scoop the batter onto the hot waffle iron and spread it out.
  • Cook for about 5 to 7 minutes until golden and cooked through.
  • Let the waffles rest before cutting each one into two thin halves.
  • Spread pizza sauce on the bottom half, top with mozzarella and pepperoni, and broil briefly until the cheese bubbles.
  • Top with the other half and serve immediately.

Notes

Serve with a side salad or dipping sauces like ranch or garlic butter for added flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
