  • 500 grams 500 grams (1.1 pounds) tomatoes (ripe or 2 cups fresh tomato puree) Ripe tomatoes provide the best flavor.
  • ½ to 1 teaspoon ½ to 1 teaspoon red chili flakes Adjust to taste for heat preference.
  • ¾ tablespoon ¾ tablespoon garlic (finely chopped or minced) Garlic adds flavor; don't burn it.
  • 2 tablespoons 2 tablespoons olive oil
  • ⅓ to ½ teaspoon ⅓ to ½ teaspoon salt Adjust to taste.
  • 1 teaspoon 1 teaspoon sugar To balance the flavors.
  • ½ teaspoon ½ teaspoon dried oregano
  • ½ to ¾ teaspoon ½ to ¾ teaspoon dried basil Alternatively, use 2 tablespoons finely chopped fresh basil.
  • ¼ to ½ teaspoon ¼ to ½ teaspoon crushed black pepper

Preparation

  • Start by peeling and chopping the fresh tomatoes. If using tomato puree, skip this step.
  • Heat the olive oil in a medium saucepan over medium heat. Add the minced garlic and sauté for about 1-2 minutes until it becomes fragrant, but be careful not to burn it.
  • Add the chopped tomatoes or tomato puree to the pan. Stir well to combine with the garlic.
  • Season the mixture with salt, sugar, red chili flakes, dried oregano, dried basil, and black pepper. Adjust the chili flakes according to your heat preference.
  • Let the sauce simmer on low heat for about 15-20 minutes, stirring occasionally until it thickens to your desired consistency.
  • Taste the sauce and adjust the seasonings as necessary.

Notes

This sauce pairs beautifully with various sides like salad and garlic bread. For storage, keep in an airtight container in the fridge for about a week or freeze for up to three months.
