Ingredients
  

Pizza Base

  • 1 pound Pizza Dough (store-bought or homemade)

Toppings

  • 2 tablespoons Olive Oil Divided
  • 3/4 cup Tomato Sauce
  • 1 1/2 cups Mozzarella Cheese, shredded
  • 1/2 cup Cheddar Cheese, shredded
  • 1/2 cup Bell Peppers, sliced (red and yellow)
  • 1/4 cup Red Onion, thinly sliced
  • 1/4 cup Sweet Corn
  • 2 tablespoons Jalapeños, sliced
  • 1/4 cup Black Olives, sliced
  • 1/2 teaspoon Garlic Powder
  • 1/4 teaspoon Chili Flakes
  • A small handful Fresh Cilantro, chopped

Instructions
 

Preparation

  • Preheat the oven to 475°F (245°C) with a pizza stone or baking sheet inside for 30 minutes.
  • In a bowl, toss the sliced peppers, onions, corn, and jalapeños with 1 tablespoon of olive oil and a pinch of salt.
  • Roll or stretch the dough into a 12-inch circle on a floured surface, then transfer it to parchment paper.
  • Spread tomato sauce evenly over the dough and sprinkle with garlic powder.
  • Add mozzarella and cheddar cheeses, followed by the sautéed veggies, olives, and chili flakes.

Baking

  • Slide the pizza (with parchment) onto the hot pizza stone or baking sheet.
  • Bake for 12–15 minutes, until the crust is golden and the cheese is bubbly.
  • Drizzle remaining olive oil around the crust and sprinkle with chopped cilantro.
  • Slice and serve hot.

Notes

Pairs perfectly with a garden salad or homemade dipping sauces. Store leftovers in an airtight container for up to three days or freeze for up to two months.
