  • 1 lb lean ground beef Can be substituted with black beans or quinoa for a vegetarian option.
  • 1 cup diced yellow onion
  • 1 cup pizza sauce Use your favorite brand or homemade.
  • 2 cups shredded mozzarella cheese Feel free to mix with other cheeses like cheddar.
  • 8 pieces corn tortillas Use gluten-free tortillas if needed.
  • 1 cup sliced black olives
  • 1 cup diced bell peppers Can use any color bell peppers.
  • 1 tsp garlic powder
  • 1 tsp chili powder Add more for extra spice.
  • to taste Salt and pepper

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a skillet, cook the ground beef and onion over medium heat until the beef is browned. Drain any excess fat.
  • Stir in the pizza sauce, garlic powder, chili powder, salt, and pepper.
  • Warm the corn tortillas slightly to make them pliable.

Assembly

  • Fill each tortilla with the beef mixture, some mozzarella cheese, olives, and bell peppers.
  • Roll them up and place seam-side down in a greased baking dish.
  • Spread the remaining pizza sauce on top and sprinkle with the remaining cheese.

Baking

  • Bake for 20-25 minutes or until the cheese is bubbly and golden.
  • Serve hot.

Notes

Best served hot with fresh herbs on top and sides like salad or dipping sauces. Can customize with various toppings and adjust spice levels as desired.
