Preparation
- Preheat oven to 400°F (200°C).
- Wash and thinly slice the potatoes into rounds, about 1/8 inch thick.
- In a large bowl, toss the potato slices with olive oil, garlic powder, oregano, basil, salt, and black pepper until evenly coated.
Baking
- Arrange the slices in a single layer on a baking sheet lined with parchment paper.
- Bake for 20 minutes, then remove from the oven and sprinkle with shredded mozzarella cheese and mini pepperoni slices if using.
- Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly, and the edges of the chips are crisp.
- Remove from oven and let cool slightly before serving with warm pizza sauce for dipping.
Notes
Serve with warm pizza sauce for dipping. Pair with a light salad or fresh veggies. Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in the toaster or regular oven at 350°F until crisp.
