  • 4 large large potatoes Washed and thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded mozzarella cheese For topping
  • 1/4 cup mini pepperoni slices Optional topping
  • 1/4 cup pizza sauce For dipping

Method
 

Preparation
  1. Preheat oven to 400°F (200°C).
  2. Wash and thinly slice the potatoes into rounds, about 1/8 inch thick.
  3. In a large bowl, toss the potato slices with olive oil, garlic powder, oregano, basil, salt, and black pepper until evenly coated.
Baking
  1. Arrange the slices in a single layer on a baking sheet lined with parchment paper.
  2. Bake for 20 minutes, then remove from the oven and sprinkle with shredded mozzarella cheese and mini pepperoni slices if using.
  3. Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly, and the edges of the chips are crisp.
  4. Remove from oven and let cool slightly before serving with warm pizza sauce for dipping.

Notes

Serve with warm pizza sauce for dipping. Pair with a light salad or fresh veggies. Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in the toaster or regular oven at 350°F until crisp.
