Ingredients
  

For the Brie Bites

  • 1 small wheel (8 oz / 225 g) Brie cheese, cut into 1-inch cubes
  • 1/2 cup (65 g) finely chopped pistachios Toast lightly for extra crunch if desired.
  • 1 sheet (about 225 g) puff pastry, thawed Ensure it's completely thawed before working with it.
  • 1 egg beaten (for egg wash)

For the Cranberry Honey Glaze

  • 1/4 cup (60 g) cranberry sauce
  • 1 tbsp (15 ml) honey
  • 1 tsp (5 ml) balsamic vinegar

Instructions
 

Preparation

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Roll out the puff pastry and cut into 2-inch (5 cm) squares.
  • Place a cube of Brie in the center of each square and sprinkle the top with chopped pistachios.
  • Fold the corners up to enclose the cheese and brush each bite with egg wash.
  • Sprinkle with extra pistachios if desired.

Baking

  • Bake for 12–15 minutes, or until golden brown and puffed.
  • Meanwhile, in a small saucepan, combine cranberry sauce, honey, and balsamic vinegar over low heat. Stir until smooth and glossy.

Serving

  • Drizzle the warm cranberry honey glaze over the baked Brie bites just before serving.

Notes

To store leftover bites, place them in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for about 5-7 minutes. Unbaked bites can be frozen before baking for longer storage.
