Ingredients
  

For the Brie Bites
  • 8 oz Brie, cut into 1-inch cubes
  • 1/2 cup shelled pistachios, finely chopped Can substitute with walnuts or almonds.
  • 1/2 cup panko breadcrumbs
  • 1 large egg, beaten For a vegan version, use a flax egg.
  • 1/4 cup flour
  • 2 tbsp olive oil (for pan-frying)
For the Raspberry Honey Drizzle
  • 1/4 cup raspberry preserves Fresh raspberries can replace the preserves.
  • 1 tbsp honey
  • 1 tsp lemon juice

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Set up a breading station by placing flour, beaten egg, and a mixture of panko breadcrumbs with chopped pistachios in separate bowls.
  3. Dip each Brie cube into the flour, then coat it in the egg, and finally roll it in the panko-pistachio mixture, ensuring each piece is well covered.
Cooking
  1. In a pan, heat olive oil over medium heat.
  2. Pan-fry the Brie bites until golden brown on all sides, about 2-3 minutes for each side.
Making the Drizzle
  1. Combine raspberry preserves, honey, and lemon juice in a small saucepan, heating on low until combined and smooth.
Serving
  1. Serve the warm Brie bites generously drizzled with the raspberry honey glaze.

Notes

Best enjoyed warm. Can be arranged on a wooden board with fresh raspberries and sliced baguette. Reheating leftovers in an oven is recommended for best results.
