  • 1 cup Fresh Pineapple, diced Canned pineapple can be used as a substitute, adjust the sugar to taste.
  • 2-3 pieces Habanero Peppers Adjust based on your heat preference; can substitute with serrano or jalapeño for milder heat.
  • 3-4 cloves Garlic, minced Fresh garlic is recommended for the best flavor.
  • ½ cup White Vinegar Adds acidity to balance sweetness.
  • 1 tablespoon Brown Sugar Balances the heat from habaneros.
  • ½ teaspoon Salt Enhances the overall flavor.
  • 1 tablespoon Olive Oil For sautéing the garlic.

Preparation

  • Preheat your oven to 400°F (200°C).
  • Halve the habaneros and remove the seeds for less heat. Place them cut-side down on a baking tray lined with parchment paper. Roast for about 10-15 minutes until charred and blistered.
  • In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 2 minutes, being careful not to burn it.
  • In a blender, combine roasted habaneros, diced pineapple, sautéed garlic, white vinegar, brown sugar, and salt. Blend until smooth.
  • Pour the mixture into a saucepan and simmer on low heat for about 10 minutes to meld the flavors.
  • Allow the sauce to cool before transferring it to an airtight container. It can be used immediately or refrigerated for a few days to enhance its flavors.

Notes

Adjust sweetness or acidity as needed while simmering. Wear gloves when handling habaneros to avoid skin irritation.
