  • 1 cup black beans, rinsed and drained Canned beans can be used for convenience.
  • 1 piece bell pepper, diced For added flavor, sauté with garlic before adding.
  • 1 cup corn
  • 1 piece avocado, sliced
  • 1 piece lime, juiced Can substitute with lemon juice.
  • Salt and pepper to taste
  • Optional: chopped cilantro, hot sauce for garnish

Preparation

  • In a large bowl, combine the cooked quinoa, black beans, diced bell pepper, and corn.
  • Squeeze the lime juice over the mixture and season with salt and pepper. Stir well to combine.
  • If desired, fold in chopped cilantro for added flavor.
  • Serve the quinoa mixture topped with sliced avocado and a drizzle of hot sauce.

Notes

For ideal lunch pairing, serve with a fresh side salad or tortilla chips. Store in an airtight container in the fridge for up to four days or freeze for up to three months.
