  • 2 pounds ground beef
  • 1 cup shredded mozzarella cheese
  • 1 cup breadcrumbs
  • 2 eggs
  • 1 onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 1 red bell pepper, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the ground beef, chopped onion, bell peppers, garlic, mozzarella cheese, breadcrumbs, eggs, salt, and pepper.
  • Mix until well combined, then shape into a loaf and place in a baking dish.

Cooking

  • Bake in the preheated oven for about 1 hour or until the meatloaf is cooked through and has reached an internal temperature of 160°F (70°C).
  • Let it rest for 10 minutes before slicing. Serve warm.

Notes

Serve with mashed potatoes or a salad. Slicing the meatloaf and placing it in a hoagie roll with onions and cheese is a fun twist. Use barbecue sauce or marinara for flavor enhancement.
