Fresh Ingredients

  • 10 pieces fresh Roma tomatoes Choose ripe tomatoes for the best flavor.
  • 2/3 cup onion, diced
  • 2 cloves garlic, minced
  • 1/2 tsp sugar Balances the acidity of the tomatoes.
  • 1 tsp cumin
  • 1/2 cup cilantro Use fresh for best flavor.
  • 1 piece lime, juiced
  • 1/2 tsp salt
  • 1 piece jalapeno pepper, seeds removed and diced Adjust heat by removing seeds.
  • 1 piece poblano pepper, seeds removed and diced Adjust heat by removing seeds.

Preparation

  • Rinse and dry the tomatoes. Slice off the ends and cut them in half.
  • Squeeze the tomatoes gently to remove the juice and seeds.
  • Place the tomatoes in a large food processor.
  • Pulse the tomatoes 4-6 times until they reach a thick and chunky consistency.
  • Add all the remaining ingredients to the food processor with the tomatoes.
  • Pulse 3-5 times until the mixture is well combined but still has some chunky texture.

Serving

  • Serve your salsa with crispy tortilla chips or use it as a topping for tacos, burritos, grilled chicken, or fish.
  • You can also use it as a dressing over salads or add it to scrambled eggs for breakfast.

Notes

Store in an airtight container in the refrigerator for up to 5 days. For longer storage, freeze in a container with space at the top.
