Ingredients
  

Main Ingredients
  • 1 cup unsalted butter, softened Use room temperature butter for best results.
  • 1/2 cup powdered sugar, plus extra for rolling Extra for rolling after baking.
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour Can be substituted with gluten-free blend.
  • 1/4 teaspoon salt
  • 1 cup finely chopped pecans Can be substituted with walnuts or other nuts.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter and 1/2 cup of powdered sugar in a large bowl until light and fluffy.
  3. Mix in the vanilla extract until well incorporated.
  4. In a separate bowl, whisk together the flour and salt.
  5. Gradually add the flour mixture to the butter mixture, mixing until just combined.
  6. Stir in the chopped pecans until evenly distributed.
  7. Roll the dough into 1-inch balls and place about 2 inches apart on an ungreased baking sheet.
Baking
  1. Bake for 15-18 minutes, or until the bottoms are lightly golden.
  2. Remove from the oven and let cool on the baking sheet for about 5 minutes.
  3. While warm, roll the cookies in powdered sugar.
  4. Once completely cooled, roll the cookies in powdered sugar again.

Notes

Cookies can be paired with hot cocoa, coffee, or herbal tea. Store in an airtight container for up to one week or freeze for up to three months.
