  • 1 cup packed light brown sugar
  • 1/2 cup all-purpose flour
  • 2 cups chopped pecans Can be toasted for extra flavor.
  • 2/3 cup butter, softened Ensure it's at room temperature for better mixing.
  • 2 large eggs, beaten Can substitute with plant-based options for a vegetarian version.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix together the brown sugar and flour.
  • Add the softened butter and beaten eggs, and stir until well combined.
  • Fold in the chopped pecans.
  • Line a muffin tin with paper liners and fill each muffin cup about 2/3 full with the batter.

Baking

  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool before serving.

Notes

These muffins are great on their own but can be paired with whipped cream or vanilla ice cream. Store in an airtight container at room temperature for up to three days, or in the fridge for up to a week. For longer storage, freeze individually wrapped muffins for up to three months.
