  • 1/2 cup all-purpose flour

  • 2/3 cup butter, softened Make sure butter is at room temperature.
  • 2 large eggs, beaten

Preparation

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a mixing bowl, cream the softened butter and brown sugar until light and fluffy.
  • Add the beaten eggs and mix until well combined.
  • Gradually stir in the flour until just combined.
  • Fold in the chopped pecans.
  • Divide the batter evenly among the muffin cups.

Baking

  • Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Allow to cool before serving.

Notes

Serve warm with honey or maple syrup, fresh fruit, whipped cream, or a scoop of vanilla ice cream. Muffins can be stored in an airtight container for up to three days or refrigerated for up to a week. Freeze for up to three months.
