  1. In a large bowl, combine chopped pecans, crushed graham crackers, powdered sugar, ground cinnamon, and salt.
  2. Add the softened cream cheese, caramel sauce, and vanilla extract to the dry ingredients.
  3. Mix well until all ingredients are evenly incorporated and a sticky dough forms.
  4. Using your hands, form the mixture into 1-inch-sized balls.
  5. Roll each ball in extra chopped pecans until fully coated.
  6. Place the pecan balls on a parchment-lined tray and refrigerate for at least 1 hour to firm up.
  7. Before serving, drizzle extra caramel sauce over the pecan pie balls for added sweetness and presentation.

Notes

Store Pecan Pie Balls in an airtight container in the refrigerator for up to a week. They can also be frozen for up to three months; just let them thaw in the refrigerator before serving. For a spicy kick, add a pinch of cayenne pepper or nutmeg.
