  • 1/2 cup powdered sugar Plus additional for coating.
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can be substituted with a gluten-free blend.
  • 1 cup pecans, finely chopped Substitute with walnuts or almonds if desired.
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Mix in the vanilla extract.
  4. Gradually incorporate the flour and salt, mixing until combined.
  5. Fold in the finely chopped pecans.
  6. Shape the dough into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes, or until the edges are very lightly golden.
  8. Take them out of the oven and let cool for a few minutes.
  9. While still warm, roll the cookies in additional powdered sugar to coat.
  10. Allow them to cool completely before serving.

Notes

To keep your Pecan Meltaways fresh, store them in an airtight container at room temperature for up to a week. For longer storage, freeze them layered with parchment paper in a freezer-safe container for up to three months.
