Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Mix in the vanilla extract.
- Gradually incorporate the flour and salt, mixing until combined.
- Fold in the finely chopped pecans.
- Shape the dough into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes, or until the edges are very lightly golden.
- Take them out of the oven and let cool for a few minutes.
- While still warm, roll the cookies in additional powdered sugar to coat.
- Allow them to cool completely before serving.
Notes
To keep your Pecan Meltaways fresh, store them in an airtight container at room temperature for up to a week. For longer storage, freeze them layered with parchment paper in a freezer-safe container for up to three months.
