Preparation and Baking
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the peanut butter and softened butter until smooth.
- Gradually add the powdered sugar, mixing well after each addition.
- Stir in the vanilla extract.
- In a separate bowl, whisk together the flour and salt.
- Gradually blend the dry ingredients into the peanut butter mixture until a soft dough forms.
- Roll the dough into 1-inch balls and place them on the prepared baking sheet about 1 inch apart.
- Bake for 12-15 minutes, or until the bottoms are lightly golden.
- Allow the cookies to cool for 5 minutes on the baking sheet, then roll them in powdered sugar while still warm.
- Transfer the cookies to a wire rack to cool completely, then roll again in powdered sugar.
Notes
Store in an airtight container at room temperature for up to a week, refrigerate for up to two weeks, or freeze for up to three months, separated by parchment paper.
