  • 1/2 cup unsalted butter, softened Make sure it is softened properly for a smoother mixture.

  • 1 teaspoon vanilla extract You can experiment with flavored extracts like almond or coconut.
  • 1 1/2 cups all-purpose flour For a chocolate version, substitute half with cocoa powder.
  • 1/4 teaspoon salt
  • Additional powdered sugar for rolling Roll twice for the classic snowball look.

Method
 

Preparation and Baking
  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the peanut butter and softened butter until smooth.
  3. Gradually add the powdered sugar, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. In a separate bowl, whisk together the flour and salt.
  6. Gradually blend the dry ingredients into the peanut butter mixture until a soft dough forms.
  7. Roll the dough into 1-inch balls and place them on the prepared baking sheet about 1 inch apart.
  8. Bake for 12-15 minutes, or until the bottoms are lightly golden.
  9. Allow the cookies to cool for 5 minutes on the baking sheet, then roll them in powdered sugar while still warm.
  10. Transfer the cookies to a wire rack to cool completely, then roll again in powdered sugar.

Notes

Store in an airtight container at room temperature for up to a week, refrigerate for up to two weeks, or freeze for up to three months, separated by parchment paper.
