Ingredients
  

Wet Ingredients
  • 1 cup peanut butter (creamy or crunchy) Your choice of peanut butter.
  • 1 cup granulated sugar
  • 1 cup brown sugar For extra depth of flavor.
  • 2 large eggs
  • 1 tsp vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the peanut butter, granulated sugar, brown sugar, eggs, and vanilla extract until smooth and creamy.
  3. In another bowl, combine the flour, baking soda, and salt; mix well.
  4. Gradually add the dry ingredients into the wet mixture, stirring gently until just combined—don’t overmix!
  5. Roll the dough into small balls, then place them on a baking sheet lined with parchment paper.
  6. Flatten each ball gently with a fork to create a crisscross pattern.
Baking
  1. Bake for 10-12 minutes or until they are slightly golden around the edges.
  2. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. Freeze for up to three months for longer storage.
