Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the peanut butter, granulated sugar, brown sugar, eggs, and vanilla extract until smooth and creamy.
- In another bowl, combine the flour, baking soda, and salt; mix well.
- Gradually add the dry ingredients into the wet mixture, stirring gently until just combined—don’t overmix!
- Roll the dough into small balls, then place them on a baking sheet lined with parchment paper.
- Flatten each ball gently with a fork to create a crisscross pattern.
Baking
- Bake for 10-12 minutes or until they are slightly golden around the edges.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to a week. Freeze for up to three months for longer storage.
