Preparation

  • In your favorite mug, combine the peanut butter, granulated sugar, and brown sugar. Stir until creamy.
  • Add in the flour, baking powder, milk, and vanilla extract. Mix until smooth—it’s okay if there are a few lumps, but ensure the dry ingredients are incorporated.
  • Microwave your mug cookie for about 40-60 seconds, depending on your microwave's wattage. You want it to be set but still soft in the center.
  • Let it cool for a minute, then dig in.

Notes

For an added treat, mix in chocolate chips or chopped nuts just before microwaving. Adjust the microwave time to avoid overcooking; every microwave behaves a little differently. To make it healthier, try using whole wheat flour instead of all-purpose for added fiber.
