  • 3 pieces ripe peaches, pitted and sliced Use ripe but firm peaches
  • 4 cups baby arugula
  • 4–6 slices prosciutto, torn Can substitute with vegetarian options
  • 1/4 cup crumbled goat cheese or shaved Parmesan Adjust quantity based on preference
  • 1/4 cup toasted pine nuts or sliced almonds Optional for added crunch

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • Salt and black pepper, to taste

Preparation

  • In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper. Set the dressing aside.
  • In a large bowl or serving platter, arrange the arugula, peach slices, and torn prosciutto.
  • Sprinkle with goat cheese and nuts if using.
  • Drizzle the dressing over the salad just before serving, and toss lightly to combine.

Notes

Serve immediately after tossing to keep arugula crisp. Best enjoyed fresh, store leftovers separately.
