Salad Ingredients

  • 3 pieces ripe peaches, sliced Use ripe, juicy peaches for the best flavor.
  • 4 cups mixed greens (arugula, baby spinach, or spring mix)
  • 1/2 cup crumbled feta cheese You can swap for goat cheese for a different flavor.
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup toasted pecans or walnuts Toast the nuts in a dry skillet for a few minutes.

Dressing Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • to taste Salt and black pepper

Preparation

  • In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper to create the dressing.
  • In a large bowl, combine the mixed greens, sliced peaches, red onion, and toasted nuts.
  • Drizzle with the prepared dressing and toss gently to coat.
  • Top with crumbled feta cheese and serve immediately.

Notes

Peach Feta Salad is best served fresh. Add the dressing just before serving to keep the greens crisp. If you have leftovers, store the salad in an airtight container and keep the dressing separate until ready to eat. Best enjoyed within a day or two.
